Salad with pork chops

We made it to a farmers market this weekend.
Bright and early on Saturday morning!
I wanted to see what fresh produce we could pick up. It was great.
We got fresh eggs, strawberries, arugula, some other lettuce that I have no idea of the name, white radish, and some delicious almonds. I made us a really great salad and topped it with some pork to make it a meal.

1/2 head of fresh lettuce washed and chopped
1/2 bunch of arugula washed and chopped
2 boiled eggs, peeled and chopped
white radish, peeled and chopped into matchsticks
crumbled goat cheese

Mix all that together in your favorite salad bowl and top with all this, whisked together.
2 T. Dijon Mustard
1 T. Red wine vinegar
Salt and Pepper
1 T. honey
Olive oil until a good consistency

I sauteed the pork chop in bacon grease for 5 minutes on each side on Medium in the skillet. I topped it with McCormick's Montreal Steak seasoning. Then just sliced it up on top.

All the food we found was full of flavor and I really like supporting local farmers. We've talked a lot about joining our local CSA. We would have local produce weekly.

Part of the appeal for me is that I would not be standing in the grocery trying to decide what to buy! With a box of fresh produce, I will be able to create meals around what farmers in our area are growing.
