Pulled Pork Tacos

I was blessed to spend Memorial weekend with 4 fabulous ladies at Lake Martin. We split our time: reading, watching movies, talking, and eating. Lots and lots of eating!Before I left town on Friday I grabbed lunch at Southern Sweets Bakery. I had a shrimp cake Caesar salad and it was delish!
The cake that I picked up for the weekend was the Old Fashioned Chocolate Cake. It is melt in your mouth good. If you're in town-stop by and pick one up! Make sure you have people to share it with or you will eat the entire thing.
For my assigned meal at the lakehouse, I made pulled pork tacos and they were a hit! A good change from the packet of taco seasoning you've had for years!

Pulled Pork Tacos
Smoked Pork Butt from RJ's Fire Magic BBQ.
2 Poblano Peppers, diced
1 onion, diced
2 T. butter
2 T. Worcestershire Sauce
4 limes, sliced in wedges
2 garlic cloves, diced
1 bunch cilantro, chopped
Salt and Pepper to taste
Monterrey Jack Cheese
1 Jar Salsa Verde
1 Container Sour Cream
1 package corn tortillas (made only with corn, water and lime)

In a skillet melt 2 T. butter, add poblano, onion and garlic and saute until soft.
Add in pork, Worcestershire Sauce, 1/4 cup chopped cilantro, some lime juice and salt and pepper. Cook until warmed through.
*if pork seems dry add 1/4 cup apple juice

Add sour cream, pork, slaw (recipe follows), salsa, lime and cheese to your tortilla!Red Slaw
1 Bag of shredded cabbage
1 lemon, juiced
1 T. apple cider vinegar
1 T. red wine vinegar
1 T. olive oil
2 T. honey
2 T. spicy mustard
2 T. mayonnaise

Mix all ingredients in a large bowl, whisk together well. Adjust ammounts to your taste!
Pour over shredded cabbage and mix well!

The gardenia's were in full bloom all around the lakehouse. We made several arrangements so we could enjoy their smell in every room.
