Eggplant Parmesan

We have been invaded! We spent part of our weekend clearing out the leaves from just the front yard.This is what's still to come! {sigh}This is how the dogs spent their weekend.

On the menu tonight is Eggplant Parmesan! I haven't worked much with Eggplant but every time I do I really like it. This recipe incorporates Flax seed meal instead of flour. I found mine in the baking isle. Just do a little searching and you can find it.

1 Eggplant-cut into 1/2 inch thick slices
2 tablespoons oil for each batch of eggplant. I used grapeseed oil
1 Egg-beaten
1/3 cup flax seed meal
1 palm-full of each: Oregano, Parsley, Basil
1 jar of marinara sauce
3/4 cup Parmesan
8oz. fresh mozzarella sliced
1 small onion diced
1 lb. ground turkey
Salt & Pepper

In a large skillet add ground turkey, diced onion, oregano, parsley, and basil. Saute until meat is cooked through and onion is translucent. Add salt and pepper to taste then set aside.
Mix flax seed, 1/4 cup parmesan and salt and pepper.
Dredge each slice of Eggplant through egg then flax seed mixture.
Heat 2 tablespoons of oil in skillet. Saute eggplant for 2 minutes on each side or until browned. {adding new oil when needed between batches}Sauce the bottom of your casserole dish, then layer eggplant, turkey mixture, sauce and Parmesan cheese. Repeat until the end of your ingredients.
Place sliced Mozzarella cheese on top.Bake at 350ยบ for 25 minutes.
Y'all this thing was SO good, it might be the best Paleo meal I've made yet! Enjoy!


  1. We make this at least once a week, except we bake the eggplant before putting into the casserole instead of frying. Thanks for the great recipe!

  2. I mistaken? I didn't think cheese was a paleo food? I am new to all of this and the recipe looks delicious!

  3. I also have read that Flax seed isn't Paleo.

  4. Flax seed is a seed (hence the name). Cheese isnt paleo (hence the recipe name, "Primal")

  5. Just at the bottom it says the best Paleo meal you've made yet, looks delicious if I were "Primal" though.
