Chicken Noodle Soup

It's a cold wet day today and Adam is feeling under the weather so I tried out my new Chicken Noodle Soup recipe and together we finished off the entire batch-it was that good! I would say this is the best Chicken Noodle I've ever had and the best part is there are no noodles so you can eat as much of this stuff as you want!

1 Chicken Breast, diced
1 Large Carrot, sliced
4 Celery Stalks, sliced
1 Zucchini- julienned for “noodles”2 T. butter
½ small onion, minced
32 oz. Chicken Broth
1t. each Salt and Pepper

Melt 2 T. butter
Add carrot, onion, celery and chicken
Season with Salt and Pepper
Sauté for 10 minutes
Add broth and simmer for 20 minutes or until veggies are soft.
Add zucchini and cook for an additional 5 minutes.
Serve hot and enjoy!
