Pesto can be easy to make, easy to store and goes great on a lot of things to add big flavor!
The ingredients in my pesto are:
2 Cups Spinach (I just pull whatever lettuce I have in the fridge-don't discriminate)
1/4 Cup Pine Nuts
Lemon Juice from 1/2 of a Lemon
Olive oil to drizzle in
Black Pepper
1/4 Cup Parmesan (cheese is not included in the paleo diet so add it here if you choose)

Combine lettuce, pine nuts, lemon juice, pepper and parmesan in the food processor and blend.
Gradually add in olive oil until you like the consistency and taste.
This pesto will freeze well, just add it to ice cube trays and pop it in the freezer.

I added the pesto to steamed broccoli and it was great. You can also smear some on top of grilled chicken.

For dinner we had BBQ ribs and pesto broccoli.
